Ajigasawa’s Hirame-no-Zuke Bowl

Through the year, hirame (bastard halibuts) are caught in Ajigasawa, glowing in the Sea of Japan where the fresh water from Mt. Shirakami is flowing. “Ajigasawa’s Hirame-no-Zuke Bowl” is offered with this authentic hirame soaked in tare (sauce) on top of a bowl of rice.
Each restaurant serves this dish using its original tare. (Tastes, price, how to serve are different for each restaurant.)
