Hirosaki Igamenchi Patties

Squid tentacles are pounded with a knife, mixed with other ingredients like seasonal vegetables, battered in flour, and then fried in oil to make the patties known as Igamenchi. Seafood was a precious resource in the more inland parts of the Tsugaru region during the prewar era, so the clever housewives of Hirosaki invented this beloved dish that has been passed down as a local comfort food.
