Aomori Shamrock is one of Japan’s highest-grade locally raised chicken breeds, born in 1990 in Aomori Prefecture’s Gonohe Town from the crossing of two traditional Japanese breeds.
Aomori Shamrock was born by crossing a chicken breed with a rich taste and another one that produces broth with a strong umami flavor. The chickens are raised in a free-range environment to minimize their stress and given feed mixed with Aomori garlic, a local specialty. The meat is very highly regarded in Japan and a favorite of the Japanese imperial household that has even been served at official banquets.
First of all, Aomori Shamrock is very nutritious and rich in umami when compared to ordinary chicken. As you chew, the umami flavor spreads in your mouth. The fat also has a distinctively mild sweetness and won’t sit heavy in your stomach. In addition, it produces broth with a rich umami flavor when simmered.
